For our Vendor Spotlights, we ask a couple questions about wedding days and the planning process to help brides get to know their vendors both professionally and personally. Here’s what Jason Crockarell, chef and owner of Flavor Catering, has to say!
1. What was your dream job growing up?
Professional baseball player (what boy doesn’t want to be a professional baseball player – just sounds cool)
2. What does a typical wedding day look like for you?
Arrive early in the day, set kitchen based on the menu, set buffet or begin to set dining room, meet with venue and planner, greet staff and perform lineup, begin on-site prep for menu, help run kitchen through hot food and cake, check out with service captain.
3. How did you get into the catering business?
Started out catering for movies – because I was single, able to travel, and it sounded fun.
4. How long have you been in business? Why did you decide to start a business?
Flavor has been around for 10 years, I have been working in catering and as a chef for longer than I would like to admit out loud. Started Flavor to get off the road from being a regional chef traveling 4-5 days a week. Lea and I had just recently had our first daughter, Elsa, had just joined a new church home and purchased a new house and I wanted to know no matter how late each day that I would be coming home to my girls.
5. What is your favorite part of a wedding day/event day?
Whenever possible, seeing the moment the bride comes down the aisle and watching the reaction of the groom. It was one of the best memories for me personally and I think it is always special.
6. What is your favorite dish to prepare for an event?
Pancetta and Shallot Rub Chicken with Pan Jus – it is a pretty simple dish but always impresses guests with its moisture and flavor. Sometimes simple is the best.
7. What is your favorite dish to prepare at home?
Skirt Steak Carne Asada with Fresh Pico, Fresh Guac, and Elote… my father in-law turned me on to skirt steak when Lea and I were dating and I have loved it ever since.
8. What would be your dream event to cater for?
The Golden Globes – would have said the Oscars but the Golden Globes seems a lot more fun.
9. Who would be your dream celebrity to cater for?
Music has been a big part of my life and have had the pleasure of catering for the most iconic people that I love to listen to from: Willie Nelson, Aretha Franklin, Greg Allman to Jason Isbell, Chris Stapleton and Wilco…would love to cater for The National and hope they will come in town and play a venue where we cater.
10. If you could go anywhere tomorrow, where would you go?
Cartagena, Spain.
